Healthy(ish) Comfort Foods

Listen, it’s real - the temps drop and suddenly I am craving something a little warmer, a little richer and gooier.  I try to eat healthy and mainly vegetarian, so in the summer it’s easy to toss up salads and bowls, but Fall hits and I can’t resist the need to cook up something that just makes me feel all warm and cozy inside.  

These recipes check all the boxes: 

We’ve all made butternut squash soup, but this one with the addition of fennel and the feta and pumpkin seed crisps - YUM!

I was making a lot of crispy rice salads this summer, so this is the perfect way to roll into a heartier version.

This is a super easy delicious dish to throw together.  I like to add farro or a small pasta like Acini di Pepe to make it a little more filling. And lots of parmesan cheese!

There was no way I was making a healthy comfort food list and not including my absolute desert island comfort food!  I will add broccoli, spinach, kale, whatever veggies are around to this just to green it up a bit.

No words - these are O’So good!  I used canned lentils and lived to tell :)
